This single-vineyard Riesling showcases the unique terroir of the Hughes Vineyard, situated less than 1km from Lake Ontario in the Lincoln Lakeshore sub-appellation. Bright aromas of starfruit, Gala apples, white flower, and candied peaches. Light with a mild sweetness and juicy acidity.
Winemaking Notes:
Handpicked and destemmed before being gently pressed. Started fermentation with non- Saccharomyces species before being inoculated with select Saccharomyces yeast strains. Fermentation was arrested partway through fermentation to preserve a large portion of residual sugar and to lock in aromatic intensity.
